I adapted the idea of stir frying the chong fan (肠粉) from Famous Cuisine issue 63. I gave the chong fan a quick stir fried with bit of oil, soy sauce and dark soy sauce, to flavor, fragrant and crisp it slightly. Then only fried with the rest like onion, cabbage, button mushroom and spring onion stalks. I like the texture of chong fan after frying, soft & Q, very delicious.
Bento was prepared in about 30 minutes.
