Home Made Pearls for Pearl Milk Tea

Have wanted to try out DIY the pearl myself after reading the recipe from 周老师的美食课室.  Little girl loves pearl milk tea very much, she has been requesting it ever since she was a toddler and now crazy with Chatime.  I halved the ingredients from the original recipe.

Ingredients
35g black sugar
65ml water
100g tapioca / potato / sweet potato starch
Extra potato starch

  1. Stir black sugar into water, boil
  2. Pour hot mixture into tapioca starch, fold til forming a dough, cool
  3. Dust with some extra potato starch, roll and cut dough into thin strips, then into tiny cubes
  4. Dust hand with potato starch, roll cubes into tiny pearl balls
  5. Boil a pot of hot water, drop pearl balls into hot water, stir, cook for 5 min, off heat, cover lid, let pearl continue cooking in hot water
Stir in more sugar to make-do as a dessert

Or turn them into icy cold pearl milk tea

Fruit Tea Punch

Little girl is busy with her revision again, for the final exam of the year.  I made this as a refreshment for her break time.

Ingredients
A handful of pearl sago, cooked and marinated with some sugar
1 tea bag
1 tbsp sugar
Half glass of hot water
Half glass of ice cubes
Some Hami melon, chopped

  1. Soak tea bag into hot water for a few minutes
  2. Remove tea bag, stir in sugar
  3. Mix in pearl sago, ice cubes and hami melon
I would believe it would taste better with some lemon or lime but little girl refused to add in.

Let's take a break with Rilakkuma

Winter Melon Rock Sugar 冬瓜茶砖

During our study years at Australia, hubby & me used to buy some luo han guo rock sugar 罗汉果茶砖 from the Chinatown.  Instead of all the trouble boiling some leong sui ourselves, we just dilute those rock sugar in hot water and the leong sui was ready.

Once we were back home, we didn't bother to find the type of rock sugar any more as we able to drink leong sui easily everywhere.

Then when I saw Carol's posting on making the winter melon rock sugar, it really caught my attention and lure me into this attempt :)

I altered the recipe slightly as I had only a small portion of winter melon left after using the majority for boiling soup.

Ingredients
440g winter melon, skinned, seeded
440g brown sugar
100g black sugar (I able to get only 冰花糖 or gula merah from the herbal shop)

  1. Cut winter melon to tiny cubes
  2. Mix brown sugar into winter melon cubes, mix well, put aside for at least an hour (I left it over night)
  3. Heat the winter melon mixture on stove with low heat, until the mixture is boiling
  4. Mix in black sugar, keep stirring until the sugar dissolve
  5. Continue simmer it for about 1.5 - 2 hours, stirring it often to make sure it does not burn or spilt
  6. When time is up and mixture turn gooey, off heat and pour mixture into silicon ice cube tray, let it cool off and solidified
  7. Remove rock sugar from ice cube tray, store in refrigerator
In order to make the drink, just dilute one of the rock sugar cube into hot water, adjust water according to desire sweetness.

It is very soothing while drinking warm...

or refreshing when it is icy cold

3 Colors Milk Tea 三色奶茶 & Something to Teachers

Little girl has been busy doing her revisions for the past 2 days.   I let her studied & did her workbooks on Moral and Chinese Maths subjects on Sat.  As for the relaxing part, I let her had a bit of cartoons in between, cooked her the favorite Pan Mee and she got to enjoy the spa bath again after a hectic day.

As for Sun, let her studied on Malay & Chinese Science subjects, she is slightly better with the Malay this time, both of us were not struggling too much this round, phew!  I made her this drink to cheer her up - the 3 colors milk tea with grass jelly.

Able to see the 3 colors clearly b4 stirring

Ingredients (all rough estimate only, as I didn't measure the ingredients)
100ml hot tea
50ml cold milk
1 tbsp gula Melaka syrup
2 tbsp grass jelly, chopped
lot of ice cubes

  1. Pour gula Melaka syrup to a tall glass
  2. Scoop in lot of ice cubes and chopped grass jelly into the glass
  3. Gently & slowly pour in cold milk, then follow with the tea.  Serve
  4. Stir before drinking

The usual looking ice milk tea with grass jelly

In between of the revision, little girl decided to make her teachers something as the school is going to celebrate Teacher's day on Mon.

She made 5 of these for each of the teachers who teach her

For the form teacher who teaches her Chinese, English Math, Chinese Math, English Science and Moral subjects

For the teacher who teaches Chinese Science

For her Malay and PE subject teacher

For her English, Music and Art class teacher

Lastly, for the computer class teacher

After all her revisions, I was feeling a bit relief, hope she'll do fine for the exams in next 3 days.

Do u like milk?  What about lemon/lime soft drink like sprite or 7up?  But when this 2 get married, u'll have something like below, milk cooler!  Trust me, it is very refreshing instead of causing u tummy upset :)

I got the recipe during my stay at England again, either from TV or magazine.

Milk Cooler

1 glass milk
2/3 glass of lemon/lime soft drink
1 cup of crushed ice

Mix the milk and lemon/lime soft drink together, being careful not to make the soft drink fizz up everywhere, and pour over the crushed ice.

Easy, cool and delicious.

柚子茶 / Grapefruit tea

I like 柚子茶 very much, however, those selling at supermarket (mostly imported from Korea) are very expensive, among RM20 - RM40.  Though it was in a big bottle, I still find it painful to pull out that amount of money from wallet.

I was searching for some recipes at the web one day, and found this recipe it.  Bought 2 grapefruits to try out the recipe.

I skinned the zest, sliced it thinly, peeled all the fresh.  Melted a packet of rock sugar with a bit of water, then threw in all of the fruit and zest.

It looked like this once cooked, delicious!  Tasted as good as bought.  I spent less than RM10 for all!
