Ingredients:
1 pita bread
1 tomato, diced
2 slices cheddar cheese, shredded
some shredded mozzarella cheese
butter
- Halve pita bread, stuff some cheddar and mozzarella cheese deep into pita bread pocket, then follow with tomato, lastly with more cheddar and mozzarella cheese. Be careful while stuffing, do not break the pita bread.
- Preheat non stick pan.
- Spread butter on both side of pita bread
- Place pita bread into pan, fried til brown and crisp, flip over continue frying the other side til brown and crisp
- Serve while hot
After one bite, little girl told me that she loved it and demanded it for breakfast again 2moro.

I like cheese and tomato melts. Too bad MP hasn't acquired this taste yet.
