Honey Oatmeal Buns


Promised mum to bake some breads on Sun, as I still don know what bread to bake when I reached mum's place, I turned lazy, browsing thru the net, checking out recipes, hopped over to Carol's place to check further, and I stumbled onto this honey oatmeal buns.

As mum & me has started on the oatmeal diet for more than a month, this ingredient is always in our pantry for sure :p

Ingredients for oatmeal tang zhung
50g instant oatmeal
200g hot water
2 tbsp bread flour

  1. Soak instant oatmeal into hot water for 5 minutes or til oatmeal turned soft
  2. Add in bread flour, mix well and cook in microwave for 1 minute on High
  3. Give it a good stir, form into a dough, and let it cool off

Ingredient for main dough
All oatmeal tang zhong
250g bread flour
3/4 tsp instant yeast
10g milk powder
40g honey
70ml cold water
1/4 tsp salt
20g butter

  1. Place all ingredients except butter into a mixing bowl, knead with machine for 5 minutes
  2. Put in butter, continue kneading for 12 - 15 minutes
  3. Place dough into a container or bowl, lightly sprinkle with water, cover with wet cloth or sling film, let it proof for 1 hour or til double its size
  4. Once leaven, punch air out from dough, make 7 smaller doughs with 100g each.  Roll them round, let them rest for 15 minutes
  5. Roll each dough into olive (or oval) shape, sprinkle with some water and let them have second proofing for 1 hour
  6. 8 - 10 minutes before proofing time complete, pre-heat oven at 170C
  7. Brush doughs with egg wash, then cut a slit opening on each dough
  8. Bake in oven for 20 - 22 minutes or until golden brown

The buns smell great and soft too, even after a day old.




I stuffed in some cooked corn beef and sliced cucumbers for breakfast, little girl and me shared it together, but little girl dislike the corn beef and refused to finish up her portion, wrong move :(
