Bacon & cucumber roll And Strawberry pancake


I don know what lunch to make for little girl this afternoon.  I still have half cucumber left after little girl had it with 3 nuggets for breakfast, aiya, gotta think of something to finish it, so there it go: had it grated, rolled in bacon and pan-fried.  Hm....   very juicy!






Brother bought lots of strawberries from Cameron Highland, I decided to make some pancake as little girl's after school snack.









The pancakes in left container will be our breakfast for 2moro and the right will be for SIL and cousin.







I got this pancake recipe during our stay at London from a megazine, it is a recipe of American Pancakes (makes 12 pancakes):

120g plain flour
a good pinch of salt
1 tsp golden caster sugar
2 large eggs, separated
20g unsalted butter, melted, plus extra for frying
200ml full-fat milk
maple syrup, to serve

1. Sift the flour, salt and sugar into a bowl, then make a well in the centre
2. Add the egg yolks, butter and milk and beat with a whisk until mixed
3. Gradually work in the flour to make a very thick but lump-free batter
4. In another bowl, whisk the egg whites until stiff, then fold them into the batter with a large metal spoon
5. Heat a heavy-based frying pan until medium hot, then grease it lightly with butter
6. Fry the mixture in batches of 3, using a heaped tablespoon of batter for each pancake
7. Cook for about 1 min until golden underneath, then turn over with a spatula and cook for another min.  Serve hot with maple syrup.
