Ingredients: (Make 2 okonomiyaki)
For the batter
100g flour
60g Chinese yam, grated (I used 120g)
160cc milk (I used 180cc)
1/2 tsp baking powder
Pinch of salt
Cabbage, shreded (u may put in additional vegetables like chives, spring onions and even kimchi)
6 pieces bacons
2 eggs
For the batter:
- In a big bowl, pour in milk, mix in flour, baking powder and pinch of salt, mix til combine
- Add in grated Chinese yam, mix til even
- Rest for 30 minutes
- Lightly fry 3 pieces of bacons in a non stick pan
- Meanwhile, mix 1/2 portion of vegetable, an egg and 1/2 portion of batter into a big bowl, mix well
- Flip the bacons, then pour the vegetable mixture onto the half cooked bacons
- Cook for about 3 minutes, carefully flip over the cake, continue cooking for another 3 minutes
- Place cooked okonomiyaki on plate, drizzle with okonomiyaki sauce, mayo and sprinkle lots and lots of katsuobushi (bonito flakes) and aonori (nori flakes), serve.
