Another lazy day with baking from Sunday, the Mexican bun (a.k.a Roti Boy) in this bento :p Guess u know how I used the 1 minute lol

1 Minute Bento (182)

SIL baked a batch of bacon rolls yesterday, whereas me, I baked a batch of Mexican buns, a batch of pizza buns and a loaf of plain white bread. With 1 busy afternoon, it saved me plenty of times on preparing bento, like this one here, used only about a minute to chop those honey dew and threw everything into the box :p

Kasutera / Castella Japanese Sponge Cake



I first learned about this kasutera Japanese sponge cake from Carol's, then Angie's, after googled for more related recipes, I found it quite interesting & the ingredients are very simple too.

I'd followed Carol's recipe as she has every steps in detail, however, I didn't follow her part of DIYing the cake mold, I used loaf pan & some paper cups instead.

Ingredients
6 eggs, at room temperature
150g high protein flour
150g caster sugar (used 120g)
2 tbsp/30cc milk
60g honey (used 4 tbsp)

As for the method, u may refer to Justhungry's, I am a bit lazy to do the translation today :p

If u can't resist urself from popping one into ur mouth right after this muffins turning cold, u'll be disappointed, as they r very very dry... they need time to rest and moisten up, so eat at ur own risk ;)

Sure enough, the cake turn soft the next day, not as dry like before, taste really good with a cup of tea or coffee, yum!

Spanish Omelette Bento (181)

As a person who love egg & potato, I must say Spanish omelette or tortilla de patatas is super delicious even when eating it cold. Thus, it is very ideal too to pack it into bento.

I used about 20 min to fry the potato then the omelette, rather cooked it slowly then having the omelette burned :p Took about 10 min to pack the bento.

6 pieces of Spanish omelette, cucumber slices as divider, 4 honey dew balls and a container of u guess what is it? (hint: look at the cutie cartoons)

Mrs Crabby in The Bento (180)

Didn't plan to make Mrs Crabby, it just climbed into the bento unintentionally :p When I asked little girl what could she see in the bento, she told me crab aloud, so there is no doubt at all :)

I cooked 2 dried flat noodle & blanched some amaranth veggie 莧菜 this morning for our lunch & the bento. Re-heated the stewed pork belly & mushroom in the microwave, then mixed everything into the cooked noodle and packed the bento, all done within 15 minutes with a little help from little girl with the fruits.

Kuih & Fruits Snack Bento (179)

It is a small snack day, little girl requested only fruits (honey dew & mango) for her snack bento but I squeezed in the 2 tiny pieces of her fav kuih serimuka leftover from her breakfast.

Bento was packed in less than 10 minutes.

I was in a rush this afternoon, had almost forgotten to put the bento into little girl's bag. There was no time to write the note and only a quick shot taken from my dining table :p

Fried Rice & Wanton Bento (178)

Little girl has the Ching Ming holiday yesterday, she didn't go to school but she went back to her pre-school to has a little reunion with her friends & teachers, she was so glad to be back there :p

Little girl has requested MIL to fry some wanton over the weekend, and MIL made so much that it may last us for a week!

I cooked fried rice this morning, with some spinach stem, shredded chicken and egg. Bento was ready between 20 minutes.

Molded fried rice with heart shaped ketchup, 3 wanton, 1 marshmallow, few grapes and a container of ketchup

Bacon & Quail Egg Toast Flowers Bento (177)

I learned this toast flower method 1 or 2 yrs ago from 生活智慧王 Good Idea, a Taiwanese TV program. However, I didn't give it a try until today, it is indeed easy & fast to make.

I used about 20 minutes to make it, time mainly used for baking. I had put in cheese, a dash of mayo, bacon & cracked an quail egg into each of the toast flower.

(Don worry of the yolk, they may look raw but in actual they r cooked & set)

Encore of Mayo Chicken Bento (176)

Couldn't think of what to prepare for little girl as bento last nite, at last decided to repeat the mayo chicken again since she enjoyed it so much.

Bento was ready in 20 minutes, time mainly used on baking the potato. Little girl asked to bring along the half full chocolate pop corns to share with friends.

Bunnies and Easter Eggs Bento (175)

Little girl requested a small bento for every wed, as she needs to do class duty (sweeping the floor) during recess and has fewer time to eat.

Made her chicken mayo sammy for breakfast and bento, all ready within 15 minutes.
