Potato and Broccoli Frittata

A simple lunch for little girl and her bento.

Ingredient:
1 potato, skinned, cut to bite size
1/4 broccoli, cut to bite size
2 eggs
some mozzarella cheese
salt and pepper

  1.  Lightly deep fry the potato til just cook
  2. Meantime, blanch broccoli
  3. Beat 2 eggs, mix in cook potato, broccoli and mozzarella cheese, season with salt & pepper
  4. Oil and heat pan, pour egg mixture into pan, cover with lid, cook with low fire til bottom turn golden brown.
