Pao de Queijo (Brazilian Cheesy Balls)

Have known about this cheesy balls for long after googling thru the web, at last able to put my hands together to bake a batch of this yummy treat :p

Adapted the recipe from Cuca Brazuca.  I halved the recipe to make do about 30 little cheesy balls.

Ingredients
250g Tapioca starch
1 cup milk
1/2 cup corn oil
2 eggs
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
1 tsp salt

  1. Boil the milk, oil and salt together
  2. Pour the hot mixture into a large bowl containing tapioca starch, mix with a wooden spoon
  3. Let it cool and mix in the cheese and eggs
  4. Get your hands in there to squelch everything together into a smooth thick dough
  5. Separate and roll dough into little golf size balls
  6. Place the dough balls on a tray
  7. Bake at preheat oven at 190C for 15 minutes
  8. Reduce the temperature to 150C and cook for another 15 minutes

Crackly shell with gooey center
