The Eve of New Year (2010)'s Eve Dinner

Hahaha... I like the title of this posting!

We had our New Year's eve dinner a day early as I had my yoga class on the New Year's eve. Little girl had requested for the cheesy chicken chop again for the dinner (just like last year), and so with limited ingredients left in fridge, made do this simple dinner:

This was my plate of chicken chop (without cheese) with onion brown sauce, aglio olio topped with a packet of dried chili (from Domino's) and some cucumber slices. Hubby had a similar plate but omitted the dried chili.

Drunken Chicken

This is a back dated dish I made a few weeks ago. I gotta recipe from a cook book namely "all about chicken". This is a easy recipe, just need to cook it a day b4 to get strong flavor. If u like alcohol drink or alcohol added to ur meal, then this is a superb dish.

Ingredients

2 pieces chicken thigh meat
1 tbsp wolfberries
5-6 slices huang qi (I omitted it)

Seasonings

6 tbsps fish sauce
1 cup shaoxing wine (I used 2 tbsp Hennessy & top the cup with home-made ginger wine)

Direction:
  1. Cut away the bone from the thigh meat, then slit the meat halfway through the thickness, without cutting through. Add 3 tbsps of fish sauce and 1/4 cup of water, leave to marinate for 1 - 2 hours.
  2. Roll up the chicken and wrap with aluminum foil, twisting the ends to seal. Make 2 rolls.
  3. Bring water in the steamer to a boil, steam chicken rolls over medium heat for 45 - 50 minutes.
  4. In a deep dish, pour in 3 tbsps of fish sauce, shaoxing wine and 1 cup of cold water and combine well. Add wolfberries and huang qi.
  5. Once the chicken rolls are completely cooled, remove from the foil and soak chicken in the wine mixture together with the juice resulted from steaming the chicken.
  6. Cover with cling wrap or a lid, refrigereate for 2 3 hours. Cut into slices to serve.
I'd say I had this 2 pieces of chicken thigh almost all by myself, as I didn't give it to little girl (as it contains alcohol) and hubby is one dislike the taste of alcohol, ;p ooh... yum...

Stuffed Chicken Wing Bento (113)

I baked a batch of chicken wings last nite for dinner, and I stuffed 2 wings with fried tomato & spinach rice, as little girl's bento & breadfast today.

Therefore, this morning's preparation was speedy (only about 10 minutes), just blanched some edamame & artificial crab stick, placed a piece of cheese on the wings and heat it in the toaster oven. I took a few second to imagine what does the wing resembled, 1st a moose without the antler, 2nd a horse, finally I decided on a camel, so I cut some seaweed as its eye.

Once the bento was ready...

Me: Girl, can u come over pls?
LG: Yeah, mummy?
Me: Tell me what can u see from the bento?
LG: * look & start imagining * A whale! * slap forehead *
Me: No, it don look like a whale, I give u a hint, it is a animal live in dessert
LG: A camel? No, it is a whale!
Me: No, don u see, the camel is eating grass (edamame) and there are some flowers (crab sticks) near it.
LG: No, mummy, there r no grass and flowers in the dessert...
Me: Fine, this camel lives in the zoo...
LG: No, this is the whale's head (pointing to the chicken wing), here r some seaweed (edamame) and these r the sea anemones, it is a whale!
Me: Ok, ok, what ever... * surrender *

So, what do u see in this bento, a camel? a whale? or something else?

Oyakodon 親子丼

Didn't feel well yesterday, feeling tire n sleepy for the whole day, don know what happen to myself?

I don have the energy to cook 2 dishes & 1 soup for dinner, then remembered having a whole drumstick defrosted in fridge, decided to dig out this recipe for a quick n simple dinner.

Dinner was siap (ready) in 30 minutes, including of all washing, chopping, and cooking time!  Lucky me to have little girl's help on getting the salad done (washing the coral lettuce and cherry tomatoes), while I was doing the cooking.

Simple Hainanese Chicken Rice

Little girl loves eating chicken rice lately, as I'm a lazy person who like to cook 1 dish meal, I cooked this simple version of chicken rice for our dinner tonite.

Little girl's plate of chicken rice

The recipe is very simple, just stir-fry the wings, whole garlics, whole shallots, 1 small piece of ginger in a non stick pan for a while, put in the pre-washed rice and the correct amount of water, season the mixture and give all a boil, then move everything into the rice cooker, let it complete the rest of the cooking, done.

Braised Chicken Wings

I had cooked this dish a few times when hubby was at home, we just love braised stuffs.  Got 4 wings from SS3 pasar malam last nite and decided to cook this again.

Where I get the recipe from?  See below:

Yeah!  From manga, "妙廚老爹".  I got the recipe photocopied and pasted in my recipe bible. :)

Fyi, I'd cut down my portion of ingredients as compared with the original above cos I had 4 wings only.  Ok ok, the translated recipe is below.

Ingredients:
12 - 15         chicken wings
1 cup           soya sauce
1 cup           cooking wine
1/2 - 1 cup  sugar
a few           sliced ginger
little            cooking oil for frying

Method:
1. Put a little of cooking oil to heated pan, shallow fry wings til slightly brown.  (wings don have to be cook now)
2. Place soya sauce in pot, heat with medium fire
3. Once soya sauce is boiled, put in ginger, sugar.  Pour in cooking wine once boil again.
4. When mixture is boiled, throw in all the wings
5. Cover wings with a wooden lid or aluminum foil, and put on the pot cover (just like (6) of manga), let it simmer for 30 - 40 minutes in low fire.  Remember to turn the wings during simmering.
6. Let the wings cook thru til looking shinny (In my case, I let them simmered til the sauce became less and thicken)

Another closer look of the wing, yummy huh!  Little girl likes the sauce, mixture of salty and sweet.

Oven-fried Drumsticks

Didn't go over to mum's hse this evening, let little girl have her quiet time at home.  I tried out this recipe which I got from Yum Yum magazine, the oven-fried drumsticks.

Little girl's plate: oven-fried drumstick, sliced cucumber, stir-fried chinese cabbage with baby anchovies and some rice.

Little girl managed to finish all, but complained that the skin of drumstick tasted too garlic.

Mine.

The recipe from Yum Yum:

Ingredients A:
5 chicken drumsticks
1 tsp salt
1 tbsp garlic powder / mashed garlic

Ingredients B:
1 tsp chopped dried chilli
1 tbsp chopped spring onion
5 slices soda cracker, crushed

Method:
1. Rub chicken drumsticks with salt and garlic powder and marinate for 30 minutes
2. Coat marinated chicken drumsticks with B and bake in a preheated oven at 180 for 35 minutes.  Remove and serve.

I changed the recipe, used only 1 whole drumstick, marinated with salt and chopped garlic (that was why little girl complained).  Then coated with crushed seaweed potato chips.

Roast chicken wing bacon

I found this recipe sometime ago at wokkingmum's blog, it doesn't look very difficult to cook, so I gave it a try.

This was how the wings looked after wrapping with bacon. I didn't follow the recipe fully, skipped the garlic, cos lazy to skin off the skin.

After staying in the oven for 45mins, the bacon turned a bit crispy, and the smell and taste was just awesome.

Hubby already finished half the wing before I took this photo, and me too, can't resist it, took a bite from the wing on right site, can u see it?

Little girl likes this wing very much, she tore out all the bacon, bite the wing, swapped to bacon, then wing, bacon... After downing the wing, she finished up the remaining bacon with rice. Patting her little full tummy happily in front of TV after her meal. :)
